Stale bread is strongly recommended in this recipe, as fresh bread makes the French toast soggy. If you don’t have any stale bread, fake it by placing your nice, thick slices of fresh bread on a baking sheet and placing it into an oven at the lowest setting for about an hour.
Ingredients: Yields 6 to 8 slices
3/4 cup (93 g) all-purpose flour
1 tablespoon (12 g) evaporated cane juice
1/4 teaspoon cinnamon
1 cup (235 ml) Earth Balance®Organic Soy Milk
6 to 8 slices of thick, stale bread
Earth Balance® Original Natural Buttery Spread, to serve
In a shallow bowl or dish, combine flour, sugar, cinnamon and salt. Whisk in Earth Balance® Soy Milk until smooth.
Preheat a non-stick pan or skillet to high heat.
Dip each slice of bread into the mixture to coat with a thin layer.
Place into the pan and “toast” for about 2 minutes per side, or until golden and crispy. Flip and repeat.
Repeat with remaining slices.
Serve hot, smothered in Earth Balance® Buttery Spread and dark maple syrup.
