Strawberry Cheesecake Smoothies from the Sunny Vegan

This afternoon, we’re sharing a recipe from Amanda Prince, who writes The Sunny Vegan, a blog with lots of creative and mouth-watering recipes. You can find her on Facebook and Twitter, too.

These strawberry cheesecake smoothies are just the thing on a hot summer day.

Amanda says:

Vegan Strawberry Cheesecake Smoothies
Ingredients

2 cups fresh strawberries
1 cup ice cubes (crushed if you can)
3 tablespoons simple syrup
3 tablespoons better then cream cheese (by tofutti)
1/4 cup Earth Balance™ soymilk or coconut milk.
Vegan cookie or graham crackers for topping

Directions
Combine berries and ice in blender and pulse until smooth. Add simple syrup, cream cheese and soymilk or coconut milk and blend again until smooth. Pour into serving glasses (4 servings) and top with crushed cookies.
