Vegan Miso Soup Recipe

It used to be that chicken soup was the prescribed go-to meal for anyone feeling under the weather. There are however healthier plant-based options that not only help ease one through the transition from illness back to health, but also contribute to an overall sense of well-being. Miso soup is at the top if that list!

Miso is a salty paste made from fermented soybeans, which sometimes also includes barley or rice. Although high in sodium (lower sodium varieties are also available), one cup of miso paste is an excellent source of dietary fiber, amino acids, protein and minerals. Another major benefit of miso is its high omega-3 and omega-6 fatty acid content. Miso soup is traditionally made with fish broth and bonito (dried fish flakes), though it's simple enough to make a delicious miso soup that's completely vegetarian.

Ingredients:
4 tablespoons oil
1 medium yellow onion, chopped
6-8 cloves fresh garlic, chopped
3/4" piece fresh ginger, grated
4 cups water
1 teaspoon cumin
4 tablespoons soy sauce
1 tablespoon sesame oil
2 dried shiitake mushrooms
1 1/2 cups green peas
1 1/2 cups broccoli
4 tablespoons miso paste, divided  
 
Directions:
1. Heat the oil and sauté the onions for 3-4 minutes. Add garlic and sauté about 2-3 more minutes over low heat. Add water and turn heat to medium.
 
2. Add ginger, cumin, soy sauce, and sesame oil. Add mushrooms and simmer covered for 5 minutes to bring out the juices of the ginger and garlic.
 
3. Add the broccoli and peas, simmer until the veggies are done, about 5-8 minutes.
 
4. Scoop some of the broth into a bowl and dissolve 1 tablespoon miso per serving into the broth, and mix.
 
Try this soup over brown rice or soba noodles for a hearty and fortifying soup that will have anyone feeling better and back up to speed in no time!

Mmm Miso Soup...

When I'm feeling icky I grab a piping hot mug of tea, usually jasmine or lemon ginger...it always makes me feel better :)

Delicious!  I was feeling sick the other night and made my own miso with carrots, ginger, tofu, and turnip greens.  Definitely a soothing meal.

I like "no chicken" noodle soup and hot tea when I'm not feeling well.

I like any kind of comfort food type, such as soup, oatmeal, mac & cheese, mashed potatoes, or plain cooked rice.

I posted my sick-day recipe yesterday (oops!) but the other things I like to have when I'm feeling sick are vegan versions of my favorite childhood comfort foods.  The best?  Homemade vegan pierogi.  I make HUGE batches about twice a year, then freeze them individually on cookie sheets.  Microwaved and served with melted earth balance and maybe (if you're feeling up to it or can convince a loving family member/friend to make them for you) some fried onions.  Just like grandma used to make!
