Vegan Chocolate Mug Cake

While this single serving cake isn’t exactly diet food, it’s much lower in calories and fat than many other more decadent treats, and was created with health in mind.

Chocolate Mug Cake  (serves 1)
Chocolate cake? check. Single-Serving? check. Made nearly instantly? Oh yeah! This whole-wheat chocolate cake goes from flour to in your mouth in under 5 minutes.


Ingredients:
4 tbsp white whole wheat flour
2 tbsp brown sugar
2 tbsp unsweetened cocoa
1/4 tsp baking powder
3 tbsp Earth Balance® Organic Soy Milk
¼+ cup unsweetened applesauce
vanilla extract
dash cinnamon
2-3 tbsp vegan chocolate chips

In a small bowl, whisk flour, sugar, cocoa, baking powder and cinnamon together, set aside. For a really sweet cake, add more sugar. In another small bowl, whisk ¼ cup applesauce, Earth Balance® Organic Soy Milk, and a drop or two of vanilla extract together. Pour wet into dry, then add chips, stirring to combine. Add another 1-2 tbsp of applesauce, until the batter is wet and resembles regular cake batter. Pour batter into a coffee cup, and microwave for three minutes (at 1000 watts).

Per Serving: 276 Calories, 4.1g Fat, 59.3g Carbohydrates, 7.8g Fiber, 31.6g Sugar, 8.3g

Looks easy and delicious! One of my favorite sweet treats is Grape Salad. It is so easy! Red and green grapes on the bottom, topped with a blend of vegan sour cream, vegan cream cheese, and cane sugar. Then sprinkle with brown sugar and walnuts!

Anything chocolate! I have made a similar chocolate mug cake that was good. This sounds really wonderful. Can't wait to try it.

I like to melt some chocolate chips, dip prezels in them, and let them cool. They're delicious, and it only takes a few minutes.

I used to love raw banana ice cream.

This cake recipe was absolutely DISGUSTING. I apologize for the rudeness, but honestlym my high hopes for the recipe were dashed the very moment I took the mug out of the microwave. It turns out my immediate apprehension towards microwaving a dessert that should be baked, was right. It wasn't cooked, it's just heated flour and other ingredients. I used carob chips, which was the only good part in the whole blob. The rest was a wet mess of gross. I highly do not recommend this recipe.

Yum! Made my mug cake using a GF flour blend. for a fudgier version,  use 1 less Tbs of flour to make a gooey cake, yum

Very simple..although I did add more brown sugar and dusted w/powdered sugar =)
