Mashed on toast w sea salt and chili flakes. So simple but delish!

This deliciously creamy recipe made with heart-healthy avocados was submitted to our recipe gallery by Ashlae Warner of the blog, Oh, Ladycakes. We love that it includes a generous amount of nutritional yeast… use the Red Star variety for a Vitamin B12 boost. Here’s what Ashlae told us about this dish:
“I love spaghetti all year around, but there's something about tomato sauce that doesn't quite feel right during the warmer months. My solution? Spaghetti with creamed avocado sauce. It's a favorite in our house and a regular even in the winter.”
Ingredients:
3 ripe avocados
2 cups fresh spinach
1 cucumber, peeled and sliced
1 large vine ripe tomato, sliced
3 cloves fresh garlic
1/2 tsp. turmeric
1/4 tsp. paprika
1 tsp. salt
1 1/2 tsp. lemon juice
1/2 cup Earth Balance® Buttery Sticks
1/4 cup Earth Balance® Soy Milk (plain)
1 tsp. apple cider vinegar
1 pound spaghetti noodles, cooked and strained
2 tbsp. dried basil
1/2 tsp. salt
1 1/2 cup fresh spinach, chopped
6 tbsp. pistachios, chopped
6 tbsp. nutritional yeast
Salt and pepper, to taste
Directions:
In a food processor, combine the avocados, spinach, cucumber, tomato and garlic; mix until creamy.
Add the turmeric, paprika, salt and lemon juice; mix until creamy and set aside.
In a saucepan over medium-low heat, melt the Earth Balance® Buttery Sticks into the Soy Milk and cider vinegar.
Once melted, add cooked spaghetti noodles, basil and salt; mix for 2-3 minutes, or until the noodles are coated with the sauce.
Divide noodles evenly between six plates.
Layer, in this order: fresh spinach, avocado sauce, pistachios, nutritional yeast and salt + pepper.

Made it once . You can just dive into it and its so healthy
I put avocados on every sandwich. I also love to cut them up small, and toss well with a salad, letting them get all smushy-mushy. Add a little salt and pepper, and I don't even need dressing!
I love it just sliced on my sandwich or in guacamole. I can't wait to try this recipe!

I love avocados in just about anything! My favorite is a salad with mangos, cilantro, lime juice and a touch of chipolte powder . Delish!
