I haven't tried EB Coconut Spread yet, but I would love to! I would use it in all sorts of things: curries, stir-fries, as a spread on toast, to replace the oil in baking and/or melted over steamed veggies :)
Since I can't find the Earth Balance Organic Coconut Spread within 100 mile radius of my home I haven't been able to try it. I use Garden of Life Extra Virgin Coconut Oil for mostly raw food recipes. The saturated fats in coconut oil is a medium chain fatty acid which helps your body burn it own fat. Plus it gives your metabolism a boost. It helps keep cholesterol levels at a normal range. Sometimes I will use it to replace butter in certain cooked foods. It's also good for your skin. It would be great to try EB Coconut Spread for cooking desserts, breads, and doughs. Sure hope to see some around town one day soon.
I also have not been able to find the EB Coconut anything, or the EB mayo... You sent me awesome coupons and I haven't been able to try them..

I had it on pancakes yesterday - yum! The only problem is that it has sunflower in it, which is one of my daughter's allergies. So she is super sad that she can't have it - she loves coconut. Can't you put something else in it that's not a common allergen?
