It's that time of year when all the fun fall treats appear! There's nothing better than being able to indulge in all the tastes of the season with healthier versions of the classic goodies we all know and love. Such is the case with this simple recipe for dairy-free caramel sauce (adapted from Care2.com), which can be drizzled over sliced apples to recreate the perfect caramel apple dessert, or used on just about anything from popcorn (candy corn anyone?) to ice cream for a spectacular caramel sundae.

Ingredients: (Yields 1 cup of sauce)
1 cup Earth Balance® Soymilk (vanilla)
3/4 cup brown rice syrup
1/3 cup maple syrup
3 tablespoons water
2 tablespoons arrowroot powder
1 tablespoon Earth Balance® Natural Buttery Spread
2 teaspoons vanilla extract
Sliced apples
1. Combine Earth Balance® Soymilk, brown rice and maple syrup in a saucepan over medium heat until boiling (about 10 minutes.) Whisk continuously to avoid sticking.
2. Mix water and arrowroot in a small bowl.
3. When the boiling mixture lightly coats the back of a spoon, add the mixed water and arrowroot. Cook for 2 more minutes, whisking continuously.
4. Remove from heat and stir in the Earth Balance® Natural Buttery Spread and vanilla extract.
5. Cool and drizzle over apple slices or use as a dip.
6. Enjoy as is or add on some fancy toppings: shredded coconut, crushed nuts, sesame seeds and chocolate chips are all tasty additions.

I love caramel! My favourite way to eat it is as candy. My grandmother has a great recipe that I veganized last year. I can't get enough of them!

In coffee!
My favorite use for caramel is in tiny sticky buns, that are fairly similiar to a monkey bread. So delicious with a nice dark cup of coffee on a cold dreary Fall day.
Help, I don't have brown rice syrup, is there a good substitute for it?
@Abbey Girl -while brown rice syrup has a specific caramel-like flavor which would really work best for this recipe, here's some info below on substitutions you might try, though we'd still suggest getting a hold of the brown rice syrup as it's really delicious and since there are so few ingredients in this recipe, any changes will affect the flavor. Let us know how it works out for you!
Maple syrup (substitute 3/4 cup plus 2 tablespoons liquid for each cup of brown rice syrup)'
Molasses (substitute 1/2 cup for each cup of brown rice syrup)
Barley malt syrup (substitute 3/4 cup for each cup of brown rice syrup)
