Creamy Vegan Carrot Soup

Made with healthy carrots and onions, we love that this soup gets it’s creaminess from oats. This would be a perfect meal for anyone on a cleansing diet or really for any night of the week. Warm up with a tasty orange bowlful of nutritious goodness!

Creamy Carrot Soup (serves 2)
Oats are the magical ingredient in this soup. They give the soup a texture it wouldn't otherwise have and also impart a lot of creamy flavor without using actual cream. This soup also whips up in an instant.

Ingredients:
1 lb carrots, peeled and sliced
1 small onion, diced
1/4 cup instant oats
1/2 cup Earth Balance® Organic Soy Milk
1/2 tsp ground ginger
1/4 tsp allspice
salt and pepper - to taste (optional)

Directions:
In a medium saucepan, combine 2 cups of water, carrots, onion and oats over high heat. Bring to a boil then reduce to medium. Continue to cook, stirring frequently, until oats are cooked and carrots are fork-tender, about 5 minutes. Transfer to a blender, in batches if necessary, and blend with Earth Balance® Organic Soy Milk until smooth and creamy. Add extra water or Soy Milk if needed. Return soup to sauce pan and add spices. Gently reheat and add salt and pepper to taste if desired.

Home made vegatable soup. :).  When I make the broth I blend the veggies to make veggie burgers.

This looks amazing. My favourite is red pepper corn chowder. Made with coconut milk.

My favourite soup is probably a good hot and sour soup.

I've never heard of using oats to thicken a soup (usually use canellini beans) but this sounds too tasty not to try! My fave soup is potato leek or butternut apple yum!!!

Thick vegetable stews are my personal favorite.

I've been making spicy curried butternut soup to warm up for lunch, but I think I'll make this yummy-looking carrot soup this week. By the way, Whole Foods has a printable coupon for EB soy milk on its site everyone!
