Filling:
4 medium Yukon gold potatoes, peeled and cut into chunks (about 1 lb)
1/3 cup frozen peas
1/4 cup low sodium vegetable broth
2 Tbs. fresh squeezed lemon juice (about 1 lemon)
1 Tbs. Earth Balance® Coconut Spread
2 tsp. Madras curry powder
2 tsp. yellow mustard seeds
1/2 tsp. turmeric
1/2 tsp. onion powder
1/4 cup finely shredded coconut
Salt and pepper to taste

Dough:
1 cup whole wheat pastry flour
1/2 cup all-purpose flour, plus extra for dusting work surface
1/2 tsp. salt
8 Tbs. Earth Balance® Coconut Spread (very cold)
4 to 6 Tbs. ice water

Dipping Sauce:
Earth Balance® MindfulMayo™
2 tsp. juice and zest from one lemon
1/2 tsp. curry powder
Pinch of salt
1/4 cup vegetable oil for frying

1. Make dough: Combine flours and salt. Cut in Earth Balance® Organic Coconut Spread using a pastry cutter or two knives until the mixture resembles coarse crumbs.

2. Add just enough ice water to hold the dough together.

3. Place dough on a floured surface and form into a flat disc. Wrap in plastic wrap and chill for one hour.

4. While the dough chills, boil the potatoes until soft, about 10 to 12 minutes. Add peas to the potatoes and stir until thawed. Drain peas and potatoes. Place back in the saucepan and mash using a potato masher.

5. Stir in broth, lemon juice, Earth Balance® Organic Coconut Spread, curry powder, mustard seeds, turmeric, onion powder and coconut. Add salt and pepper to taste. Set aside.

6. Mix together the dipping sauce ingredients, place in a serving bowl, cover and chill until needed.

7. Divide dough into 12 pieces. On a floured work surface, roll each piece into a 3 1/2 inch circle.

8. Brush the edges with water and place about 1 to 2 teaspoons of the filling on one side of the dough. Fold the dough over and crimp to seal the edges. Repeat until all the dough is used up.

9. Heat oil in a small saucepan over medium heat to 350°F. Fry the samosas, about 3 at a time, until golden brown on both sides, 1 minute per side.

10. Serve warm with dipping sauce.

 Love some homemade hummus with veggies and pita wedges, fresh salsa and quacamole with tortilla chips, or bruchetta. 

I've never had samosas but they sound pretty good. I'll have to give it a try :)

samosas are one of my favorites !!! ive tried making them before n failed  :( definately ganna try out this recipe !!! i like them with a cilantro mint chutney too for dipping

Love Samosas!! When I'm craving for the flavor, but have no time to make the dough and fry, I just make a Samosa Stuffed Potato or Samosa Mashed Potatoes, making a filling of curried onions, peas, and garlic to add on top or in the potatoes... topped with that Lemon Curry Dipping Sauce! Oh yes indeed!!

My favorite appetizer are crunchy chickpeas, veggies and hummus and of course chips, guac and salsa!

Samosas are the bomb! Some of my favorite appetizers depending on what type of food I am having are: black bean and sundried tomato dip with buttery crackers, miso soup with extra tofu, vegan chickun wings.

Mmm samosas are delicious. Hummus, salsa, veg sticks, guacamole are pretty typical go-tos.

This looks delicious, but it's really not very healthy even though it is vegan. Flour, vgetable oil! Both are very bad for you. I wonder if the vegetable oil can be replaced with coconut oil? If so, that would be a much better choice. 

Carolyn, thanks for the feedback. While it is a vegan recipe, we weren't really trying to pass these off as exclusively health food, just a delicious vegan snack. Traditionally samosas usually are fried, so we've tried to keep these as close in taste and texture to the real thing. You could certainly experiment with using coconut oil, or even baking instead of frying. If you do, let us know how they turn out!
