The Xantham gum is used as a binder in gluten free cooking, without it the muffins wouldn’t hold together and most likely fall apart into crumbles. As an alternative you could try guar gum.
Sounds great, but what if you left out the xantham gum?
Can Coconut Oil be substituted for the olive oil?
Coconut oil will probably work just as well.
Coconut oil also acts as an amazing binder in baking, and it also adds added moisture and a natural sweetness to gluten-free baking.

Hi there…I’ve been vegeatarian for a few short and wonderful years now. Ready to make the leap to Vegan. That wonderful book would certainly come in handy! My ideal vegan breakfast would be a wonderful gluten free “everything” bagel with some tofutti veggie cream cheese!!! Or Vegs w/vegan chorizo sausage!!! Or tofu scramble with carrots and kale!!! Oh, it’s useless…I want them all! And after all…there are 7 days in a week and we need breakfast everyday, don’t we???? THANKS!!!

My perfect gluten-free breakfast would have to be G-F Steel-Cut Oats, with Almond Milk, Cinnamon, Banana Slices, Shredded Coconut, and a HUUUGGGEEEE spoonful of Earth Balance Coconut Peanut Butter. This was actually what I had for breakfast this morning! Delish!
