Heavenly Spanikopita Triangles (“Cheese” filled phyllo triangles)

A pita filled with falafel, hummus, tomatoes, pickles, a little hot sauce, cilantro sauce, and probably some other stuff!

Hummus and falafel, for sure. I could eat both of those every day.

can't beat good old fashioned baba ganoush! (spell?) and good grape leaves are to-die-for!

You don't mention how long to steam the spinach...?

Coucous with chopped raw vegetables, kalamata olives,  mock feta cheese ( http://www.food.com/recipe/mock-feta-cheese-vegan-substitute-118182 )  cilantro vinegrette.

It's probably not technically a dish, but HUMMUS!  Hummus makes the world go 'round.

I can't WAIT to make these Spanikopita Triangles! Seriously! I'm making them as soon as I go home. :)

(I'm also curious about how long the spinach should be steamed for, mostly just to double-check whether "steamed" is not a typo in that line for "stemmed".)

I love pizza! Is that Mediterranean?

I love pitas with falafel and hummus! 

Baklava is my personal fave! But hummus is a close second :)

totally love falafel, hummus, dolmas (stuffed grape leaves).. a sampler plate of all those and I'm happy happy

falafel! and tzaziki but I have yet to find a vegan version.....

This recipe looks so good!  I love Spanikopita!  Also, hummus (can't get enough of it!) and falafel!

Dolmas, or stuffed grape leaves are about my favorite, and hummus of course.  Baklava is pretty awesome, as is pita bread.

Leslie - just do an internet search for vegan tzaziki ...I cam across several recipes...use soy or coconut yogurt...

I actually accidentally discovered gyros!  Vegan, of course!  I also love hummus, but it has to be super garlic-y or super spicy!!!  But I just love the flatbread that gyros are made with!  Oh my!!!

I must admit the only Mediterranean food I have ever tried is baklava! But I seriously want to make that spanikopita now! I love spinach.
